Most people eat vegetables for meals only, but eating them as snacks can really kick those extra calories to the curb. The Extension Office recommends at least 2.5 cups of vegetables per day. You can also change small habits, such as substituting vegetables for an less nutritious snack just one day a week. Recommended snack choices include: baby carrots with hummus, celery and peanut butter, broccoli and cauliflower with a little Ranch dressing, cherry tomatoes, and leftover roasted vegetables.
